Scrambled egg whites with mixed vegetables

  1. Spray the pan lightly with oil or cooking spray. (You can also use a nonstick pan.)
  2. Sauté the vegetables on the stove at medium-low heat with the seasonings.
  3. Pour egg whites into the pan with the sautéed vegetables and keep stirring on medium heat.
  4. Keep stirring everything till it is cooked.
  5. Sprinkle with grated parmesan cheese if desired.
  6. Serve and enjoy!
