Scrambled Vegetable Egg-White
Serves: 2 • Prep time: 10 mins • Cook time: 15 mins
Ingredients
- 4–6 egg whites
- ¼ cup of diced tomatoes
- A handful of spinach
- ¼ cup of mushrooms
- Salt, pepper, and onion powder (to your liking)
- Optional: Add a bit of Parmesan cheese
Directions
- Spray the pan lightly with oil or cooking spray. (You can also use a nonstick pan.)
- Sauté the vegetables on the stove at medium-low heat with the seasonings.
- Pour egg whites into the pan with the sautéed vegetables and keep stirring on medium heat.
- Keep stirring everything till it is cooked.
- Sprinkle with grated parmesan cheese if desired.
- Serve and enjoy!
